This aromatic Moroccan chicken recipe is simple to make and always a crowd pleaser!

Ingredients

1 chicken braai pack (8 pieces)

Milled salt and pepper

Olive, sunflower or canola oil for frying

1 onion sliced

15ml chicken spice

15ml cumin

15ml ground cinnamon

 

1 can (410g) chickpeas drained

180ml chicken stock

300g baby marrows, sliced

Fresh coriander for serving

Cooking Method

  1. Preheat the oven to 190℃
  2. Season chicken
  3. Heat oil in a pan and fry chicken until well browned. Set aside
  4. Fry onion until soft, add spices and cook for another minute.
  5. Add tomatoes, chickpeas and stock. Season
  6. Place chicken in an ovenproof  dish pour over tomato mixture and bake for 20 minutes. 
  7. Add baby marrows and bake for another 10 – 20 minutes, or until sauce has thickened and chicken is cooked through.
  8. Garnish with coriander and serve.
